Ingredients
- 1 can (400g) crushed tomatoes
- 3 tbsp tomato paste
- 1/2 tsp chilli powder
- 2 tsp paprika
- 2 tsp ground cumin
- ½ cup chopped red capsicum
- Salt and pepper, to taste
- 2 Carisma Potatoes, finely chopped
- 2 eggs
- Crumbled feta, for garnish
- Fresh parsley, chopped, for garnish
Step 1
In a mixing bowl, combine the crushed tomatoes, tomato paste, chilli powder, paprika, cumin and red capsicum. Season with salt and pepper to taste, and mix well.
Step 2
Line your air fryer basket with a Wiltshire Air Fryer Liner. Pour the prepared tomato and mixture into the liner, spreading it out evenly. Sprinkle the Carisma potatoes over the top.
Step 3
Cook in the air fryer at 200°C (390°F) for 15 minutes, or until the potatoes are tender and the sauce is slightly thickened.
Step 4
Carefully crack two eggs over the mixture, ensuring they are evenly spaced. Return to the air fryer and cook for an additional 5 minutes at 200°C, or until the egg whites are set but the yolks remain runny.
Step 5
Remove the shakshuka from the air fryer. Garnish with crumbled feta and fresh parsley. Serve immediately and enjoy!
