Step 1
In a large bowl combine the pork mince, spring onions, garlic, coriander, soy sauce, sesame oil and rice vinegar and mix until combined.
Step 2
Spray the insides of the Silicone Air Fryer Muffin Pan 4 Cup with olive oil. Gently press a wonton wrapper into each cavity, then spray with more oil and add another wonton wrapper on top. Press the wrapper down into the cavity to make a cup shape..
Step 3
Spoon a heaped tablespoon of the dumpling mixture into each wonton cup. Transfer the muffin pan to your air fryer and cook at 190°C for 12 minutes until the wonton cups are golden and the pork mixture is cooked. The Silicone Air Fryer Muffin Pan will make 4 cups at a time so you will need to batch chook these or freeze the dumpling filling mixture for later.
Step 4
While the dumpling cups are cooking, combine the cucumber, soy sauce, chilli crisp and sesame oil in a small bowl and mix to combine then set aside.
Step 5
To serve, remove dumpling cups from the pan and top with cucumber salsa and fresh coriander leaves.
