Ingredients
- 3 medium-sized sweet potatoes
- 1 tablespoon olive oil
- ¾ cup quinoa
- 1 ½ cups water
- 4 stems of kale
- 1 cup sundried tomatoes
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- cashew cream drizzle or sauce (optional)
Step 1
Preheat the oven to 180°C.
Step 2
Wash sweet potatoes and place them in a large Wiltshire baking tray, drizzle with olive oil and bake in the oven for 1 hour.
Step 3
Boil quinoa in water in a Wiltshire saucepan, remove lid once boiling, reduce to simmer for 10-15 minutes.
Step 4
Chop kale and sundried tomatoes into small pieces, add to the saucepan with quinoa and stir well.
Step 5
Add salt, onion powder and garlic powder to quinoa mixture and stir for 2-3 minutes.
Step 6
Remove sweet potatoes from the oven, cut down the middle and stuff with quinoa mixture.
Step 7
Drizzle with cashew cream or sauce (if desired) and top with fresh herbs (if desired).
